تحلیل خوشه‌ای وضعیت اقلیم سازگاری غذایی : شواهدی از دهستان‌های شهرستان دلفان

چکیده
تغییرات اقلیمی از مهم‌ترین چالش‌های قرن بیست‌ویکم است و الگوهای تغذیه‌ای نقش مهمی در تشدید یا کاهش پیامدهای آن دارند. رفتارهای غذایی پایدار از جمله کاهش مصرف منابع طبیعی، کاهش انتشار گازهای گلخانه‌ای، مصرف محصولات محلی و فصلی و کاهش ضایعات غذایی از ارکان اساسی سازگاری با اقلیم محسوب می‌شوند. با توجه به آسیب‌پذیری خانوارهای روستایی در برابر تغییرات اقلیمی و خلأ پژوهشی در زمینه سطح‌‌بندی سازگاری غذایی در مناطق روستایی، این پژوهش با رویکرد کمی و روش توصیفی-پیمایشی با ۳۸۵ خانوار روستایی از ۱۰ دهستان شهرستان دلفان انجام شد. ابزار گردآوری داده‌ها، پرسشنامه‌ای ۱۵ گویه‌ای مبتنی بر دستورالعمل سنجش سطح پایداری رژیم‌های غذایی سازگار با محیط‌زیست فائو بود که پس از تأیید روایی و پایایی (آلفای کرونباخ 0/723) تکمیل گردید. به‌منظور سطح‌‌بندی خانوارها از معیار طبقه‌بندی منصورفر و برای طبقه‌بندی دهستان‌ها در سه گروه «سازگار اقلیم غذایی»، «در معرض بدسازگاری اقلیم غذایی» و «بدسازگار اقلیم غذایی» از تحلیل خوشه‌بندی (K-means) در نرم‌افزار SPSS استفاده شد. یافته‌ها نشان داد که 97/4 درصد پاسخ‌دهندگان در وضعیت پرریسک یا بدسازگار اقلیم غذایی قرار دارند و تنها 2/6 درصد از وضعیت سازگار اقلیم غذایی برخوردارند؛ همچنین از مجموع ده دهستان، تنها دو دهستان (۲۰ درصد) در خوشه «سازگار اقلیم غذایی»، سه دهستان (۳۰ درصد) در خوشه «در معرض ریسک اقلیم غذایی» و پنج دهستان (۵۰ درصد) در خوشه «بدسازگار اقلیم غذایی» قرار گرفتند. این توزیع نامتوازن حاکی از الگوی غالب بدسازگاری غذایی در اکثریت جامعه است. علی‌رغم سطح تحصیلات نسبتاً بالای پاسخ‌دهندگان، سواد تغذیه‌ای-محیط‌زیستی آنان در سطح پایینی قرار داشت که بیانگر شکاف قابل توجه میان تحصیلات عمومی و آگاهی تخصصی درباره ارتباط رژیم غذایی با تغییرات اقلیمی است. در مجموع، اکثریت جامعه با موانع متعددی، از جمله موانع اقتصادی، فرهنگی، زیرساختی و سیاسی در مسیر دستیابی به الگوهای غذایی پایدار مواجه است. کاهش مصرف گوشت قرمز در سال‌های اخیر عمدتاً ناشی از شوک‌های اقتصادی بوده، نه گذار آگاهانه به سمت رژیم غذایی پایدار. این پژوهش با ارائه نقشه اقلیم ‌سازگاری غذایی در سطح دهستان‌ها، زمینه را برای مداخلات هدفمند و تفکیک‌‌شده متناسب با هر سطح از سازگاری فراهم می‌سازد و پیشنهاد می‌شود برنامه‌های آموزشی جامع با رویکرد ارتقای سواد تغذیه‌ای-محیط‌زیستی در دستور کار سیاست‌گذاران قرار گیرد.

Cluster Analysis of the Climate Status of Food Adaptation: Evidence from the Rural Districts of Delfan County

Climate change is one of the most critical challenges of the 21st century, and dietary patterns play a significant role in exacerbating or mitigating its consequences. Sustainable food behaviors emphasizing reduced consumption of natural resources, lower greenhouse gas emissions, biodiversity protection, consumption of local and seasonal products, and reduction of food waste are considered fundamental pillars of climate adaptation. Given the role and vulnerability of rural households to climate change, this research was conducted with the aim of analyzing their food behavior and mapping climate food adaptation. After identifying, designing, and validating indicators of maladaptive climate food behavior, a 15-item questionnaire was developed and completed through field studies. The total index was calculated, and households were classified using Mansourfar's (2013) classification criterion. Furthermore, cluster analysis in SPSS software was used to distinguish the rural districts of Delfan County into three groups: "adaptive," "at risk of maladaptation," and "maladaptive." The results showed that 97.4% of respondents were in a high-risk or maladaptive status, while only 2.6% were adaptive. Moreover, 80% of the districts were classified at low adaptation levels, indicating a dominant maladaptive pattern and the necessity of targeted educational and policy interventions.
